In the player bios under each roster, is there any way to add fields for information like Height, Weight, Years in the league and things like that along with the contact information?

You could add this information to the 'notes' area of the roster. To include it on the Internet, you'll need to check the 'include notes' checkbox in the Reports tab of the Internet Options screen.
