There is no category for Christmas card list. I am sure the demo claimed that various categories could be set up. What am I missing?

We don't put Christmas List in as a default Address Type, but you can easily add that as an address type.
Click Tools, then Address Types.
Click Add to add Christmas Cards.
You can as many different Address Types as you would like on this screen.
