Can you set standards such as the following: each team must play at least 1 game on Field X, Team A can not start until Friday at 5:30 PM, things of that nature.

No, Tournament Scheduler does not have a feature to enter in team exceptions or a field requirement as you're describing. You can manually reschedule a game or change the location if needed after the game schedule has been calculated.
