I see the Birthday field at the bottom of the screen, but when I click Add or Change it disappears so I can't enter in it.

The Birthday field is part of the Individuals area, so you would need to add individuals then apply their birthdays.
Click on the main contact from the Address Listing. Next Add an Individual by clicking the Add button on the right hand side. Add the name and birthday and click OK.
